Bala Baiana

Ingredients

  • 1 tablespoon salted butter
  • 1 can sweetened condensed milk (14 oz)
  • ⅔ cup sweetened coconut flakes
  • Sugar coating:
  • 1 cup granulated sugar
  • ½ cup water
  • 1 tablespoon vinegar

Instructions

  1. 1

In a saucepan, melt the butter over medium heat.

  2. 2

Add the sweetened condensed milk and coconut flakes. Stir on medium heat for 5–7 minutes until the mixture thickens and pulls away from the pan.

  3. 3

Transfer to a bowl and refrigerate until cooled.

  4. 4

Once cooled, scoop a tablespoon of the mixture and roll it between lightly greased hands to form a ball. Place on a parchment-lined pan. Repeat until all the mixture is used.

  5. 5

Make the sugar coating: In a saucepan combine the sugar, water, and vinegar. Bring to a boil, stirring occasionally, until the syrup turns amber in color.

  6. 6

Remove from heat. Insert a toothpick into each ball and dip it into the amber sugar, then place back onto the parchment-lined pan.

  7. 7

Let cool completely until the coating hardens, then serve.
