Coconut Cream Pudding Cups

Ingredients

  • 1 can (13.5 oz) full-fat coconut milk
  • 3 tbsp cornstarch
  • ΒΌ cup maple syrup or honey
  • 1 tsp vanilla extract
  • Pinch of salt
  • Toasted shredded coconut for garnish

Instructions

    In a saucepan, whisk together coconut milk, cornstarch, sweetener, vanilla, and salt.

    Heat over medium, whisking constantly, until the mixture thickens (about 5–7 minutes).
