Coconut Cream Pudding Cups
Silky, naturally sweetened coconut pudding made with full-fat coconut milk and topped with toasted shredded coconut β elegant and dairy-free.

Ingredients
- 1 can (13.5 oz) full-fat coconut milk
- 3 tbsp cornstarch
- ΒΌ cup maple syrup or honey
- 1 tsp vanilla extract
- Pinch of salt
- Toasted shredded coconut for garnish
Instructions

In a saucepan, whisk together coconut milk, cornstarch, sweetener, vanilla, and salt.

Heat over medium, whisking constantly, until the mixture thickens (about 5β7 minutes).

Pour into small cups or ramekins. Chill until set, at least 2 hours.

Top with toasted coconut before serving.
