Rice Pudding with Cooked Rice
Comforting, creamy rice pudding made with pre-cooked rice, warm spices, golden raisins, and a touch of butter — serve warm or chilled.

Ingredients
- 2 cups cooked rice (cook ahead and store in fridge or freezer)
- 1 cup whole milk
- ½ cup cream
- 1 beaten egg
- ⅓ cup sugar or maple syrup
- ¼ tsp salt
- ½ tsp cinnamon
- ⅛ tsp nutmeg
- ½ tsp vanilla extract
- ⅓ cup golden raisins
- 1 tablespoon butter

Place the cooked rice, milk, and salt in a small saucepan over medium heat.

In a small bowl, whisk together the beaten egg, heavy cream, cinnamon, and nutmeg.

Pour sugar into the rice mixture and stir to combine.
