Strawberry Spinach Salad with Poppy Seed Dressing

This salad is one of my most-requested dishes at potlucks and spring gatherings. The combination of fresh strawberries and baby spinach with crunchy toasted almonds and a slightly sweet poppy seed dressing is absolutely irresistible. The dressing takes about two minutes to whisk together and is far better than any bottled version you'll find. I often add crumbled feta or thin-sliced red onion for a little extra something.
