Browning the butter before mixing it into the batter is the one extra step that takes these from ordinary banana muffins to something truly special. It adds a nutty, caramel-like depth that pairs beautifully with ripe bananas and toasted walnuts. I always wait until my bananas are very dark and spotty before using them because that is when the flavor is at its absolute peak. These muffins make the kitchen smell incredible and are wonderful still slightly warm with a little pat of butter on top.
