Crispy Sourdough Discard Waffles

If you keep a sourdough starter, you know how much discard accumulates, and these waffles are one of my absolute favorite ways to use it. The discard adds a subtle tang and contributes to an incredibly light, crispy waffle with a tender interior. They are wonderful topped with fresh berries and a drizzle of real maple syrup. I always make a double batch and freeze the extras to toast on weekday mornings.
