Snickerdoodles are my absolute favorite cookie, and I've made probably a hundred different versions over the years to land on this one. The secret is cream of tartar, which gives them that signature tangy flavor and keeps them perfectly chewy for days. I always roll them generously in cinnamon sugar and bake them until just barely set so they stay pillowy soft. These are the cookies I bring to every bake sale, church potluck, and cookie exchange.
