This pot roast is my Sunday tradition. I put it together in the slow cooker before church, and by the time we get home the whole house smells like heaven and dinner is completely ready. The key is searing the meat first to build a beautiful crust and lock in the juices before the long slow braise. The vegetables absorb all that incredible beefy flavor and become meltingly tender. This is the meal that makes everyone feel taken care of.
