Baked salmon is one of the most reliable weeknight dinners in my rotation because it comes together so quickly and everyone enjoys it. The lemon and garlic give it a bright, clean flavor that pairs beautifully with almost any vegetable side. I prefer to slightly underbake salmon and let carryover heat finish the job, which keeps it moist and silky rather than dry. Served with roasted asparagus and quinoa, this is a dinner that is as nourishing as it is satisfying.
