I started making these energy bites when my kids were young and needed healthy after-school snacks that they'd actually want to eat. They're packed with protein from the peanut butter, complex carbs from the oats, and just enough chocolate chips to make them feel like a treat. The whole batch takes about ten minutes to mix and roll, and they keep beautifully in the refrigerator all week. My grandkids now request these every time they visit.
